Make these lunch bowls ahead of time and have your work lunches ready for the week!

2 chicken breasts
1 tablespoon olive oil
salt & pepper
3/4 cup basmati rice (uncooked)
2 bell peppers, sliced into strips
2 tablespoons red onion, diced
1 cup corn kernels
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1 tablespoon sugar
1 tablespoon lime juice
1/4 teaspoon salt
3 tablespoons olive oil
3 tablespoons white wine vinegar
1. Pre-heat oven to 425°F.
